    Bananas belong to genus Musa in the family Musaceae. Bananas have yellow skin with white flesh underneath. It tastes sweet and is one of the fruits for which the Taiwanese people feel most affection, as Taiwan has always been known as the banana kingdom. Traces of banana are visible from the south to the north of the country. The Japanese in particular love Taiwan bananas. Therefore, exports of Taiwan bananas are mainly to Japan.
    Cishan District of Kaohsiung is currently still the major growing region of bananas. In addition to planting traditional banana species, in order to overcome the banana panama disease, some disease-resistant species selected by researchers have been grown in Cishan District, including “Tai-Jiao No. 1,” “Tai-Jiao No. 2,” “Tai-Jiao No. 3” and “Bao-dao-jiao” (commonly known as the Xin-Bei-Jiao). One of the distinguishing features of the local rural villages is the scene of the whole banana plantation stretching as far as the eye can see. At present, Cishan banana is the most famous banana in Taiwan. Other main production areas include the districts of Neimen and Meinong.

    Accelerated ripening is required for bananas. It is only suitable for eating fresh when the fruit’s skin turns yellow and its flesh softens with decreased astringent taste and increased sweetness. While selecting bananas, the fruit should be plump without any scratches and bruises. It should be kept in a place away from direct sunlight at room temperature. One or two days later, ripe spots will show in the banana skin. Bananas have the strongest aroma at this time, soft flesh and the best flavor; it is also the best time to consume it.

        • Cake flour  112g
        • Chocolate blocks  Appropriate amount

        • Baking powder  8g

    • Cooking Method

    First separate egg yolk and egg white; mix egg yolk and 50g of sugar well; pour cooking oil and milk into the egg paste and stir evenly, and then mix flour, cocoa powder and baking powder with the egg paste; stir evenly until there are no granules. Mix egg white and sugar until foaming, and then add it to the mixed flour paste and stir evenly; pour the paste into a baking pan and level the top. Preheat the oven to upper heat of 180℃ and bottom heat of 170℃; put the baking pan into the oven and bake for about 15 to 18 minutes; take the baking pan out of the oven and set aside. After cooling down, smear the cake surface with fresh cream; place the whole banana on the cake and roll the cake; refrigerate the cake roll for about one hour to set its shape;shave chocolate blocks into bits and small pieces; sprinkle them on the cake and serve.
