The appearance of dragon fruit often seen in Taiwan is red in color with green triangular thallus on the top, just like a horned dragon. The flesh of dragon fruit is either white or red dotted with black seeds.
    Dragon fruit is a perennial fleshy plant. Its fruit flesh contains a large amount of water due to the internal developed water storage tissue.     The best selection of dragon fruit is a medium sized fruit of 400g to 500g with plump flesh: the heavier the juicier. The fruit exterior has red and green parts, the redder the better for the red part and the greener the fresher for the green part. Otherwise, if the green part turns withered and yellow, the fruit is not fresh. The riper dragon fruit can be stored directly in the refrigerator after buying it in the market; otherwise, it should be put in a place at room temperature to accelerate the ripening.
